What’s for Dinner Today?

Spanakorizo (Spinach Rice)
(Recipe adapted from Greek Cookery: 300 Traditional Recipes. Athens, 1996)

This is a very simple recipe and a healthy meal. Like Fasolakia, you can eat it on its own or as a side. Also note that similar dishes can be made with either lentils or leeks, all very tasty.

  • 1kg spinach
  • 1/2 cup rice
  • 4-5 spring onions (or 1 large onion), finely chopped
  • 1 bunch parsley, finely chopped
  • 3/4 cup olive oil
  • Juice of 1-2 lemons
  • Salt, pepper

Pick, wash and blanch the spinach. When it has cooled, squeeze it to remove all excess liquid, and chop it up. Heat the oil in a pot and brown the onions. Add the spinach, a little water and the salt and pepper. A short time before the spinach is cooked, add a little more hot water (1-1 1/2 cups) and when it comes to a boil, put in the rice and parsley. Cover the pot and simmer for 15-20 minutes. Serve the spinach rice with lemon juice (if desired).

Variation: When adding the spinach, also add a teaspoon of tomato paste mixed in a little water.

  1. I love spinach, this recipe looks divine. I read your last comment about snowshoeing. We love to walk, and have sometimes wanted to try snowshoeing. Please post about it if you ever do, let us know what it’s like!
